Ingredients

  • Salt to taste
  • 2 cups chicken broth
  • 1 tbsp vegetable oil

For the Masa Dough

  • 4 cups masa harina (corn flour for tamales)

  • 1 tsp salt
  • 1 cup lard or vegetable shortening
  • 2–2 ½ cups chicken broth (adjust as needed)

For Assembling

  • 30–40 dried corn husks (soaked in warm water for 30 minutes)
  • Optional toppings: Salsa, crema, cilantro

Instructions

1. Prepare the Corn Husks

  1. Soak dried corn husks in warm water for 30–40 minutes.
  2. Pat dry and remove any stiff ends. Set aside.

2. Make the Red Chile Sauce

  1. Remove stems and seeds from dried chiles.
  2. Toast briefly in a dry skillet until fragrant.
  3. Soak chiles in hot water 15 minutes to soften.
  4. Blend soaked chiles with garlic, cumin, oregano, and salt until smooth.
  5. Strain for a silky texture if desired.

3. Cook the Pork

  1. In a heavy pot, heat oil over medium heat.
  2. Brown pork chunks lightly.
  3. Add chile sauce and chicken broth.
  4. Simmer 2–3 hours until pork is tender and shreddable.
  5. Shred pork and return to sauce.

4. Make the Masa Dough

  1. In a large bowl, beat lard until fluffy.
  2. In another bowl, mix masa harina, baking powder, and salt.

  4. Dough should be soft, light, and spreadable.

5. Assemble the Tamales

  1. Spread 2–3 tablespoons of masa on a corn husk, leaving edges free.
  2. Place a spoonful of pork filling in the center.
  3. Fold sides over filling, then fold bottom up.
  4. Repeat until all masa and filling are used.

6. Steam the Tamales

  1. Arrange tamales upright in a steamer basket.
  2. Cover with a damp cloth or extra husks.
  3. Steam 1–1.5 hours, checking water levels regularly.
  4. Tamales are done when masa separates easily from husks.

Serving & Enjoying

  • Serve hot with fresh salsa, Mexican crema, or chopped cilantro.
  • Traditional beverages: Horchata, atole, or Mexican hot chocolate.
  • Tamales can be stored in the fridge for 3–4 days or frozen for up to 2 months.
