Ingredients
  

Main Quesadilla Base
  • 2 large flour tortillas can use low carb or whole wheat
  • 1 cup cooked chicken breast shredded
Filling
  • 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 0.5 cup bell peppers diced
  • 0.25 cup onion finely chopped
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • to taste salt
  • to taste black pepper
For Crisping
  • 1 tbsp olive oil or cooking spray
Optional Dips
  • to taste salsa
  • to taste guacamole
  • to taste sour cream

Equipment

Method
 

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, combine chicken, cheese, bell peppers, onion, cumin, chili powder, salt, and pepper.
  3. Place filling on half of each tortilla, fold over, and cut into bite-size triangles.
  4. Brush or spray bites with olive oil.
  5. Arrange in a single layer in the air fryer basket.
  6. Cook 6-8 minutes, flipping halfway, until golden and cheese is melted.
  7. Serve warm with salsa, guacamole, or sour cream.

Notes

Add black beans, corn, or jalapeños for variety. Great for meal prep or party platters.
