Ingredients
  

Cream Cheese Mixture
  • 16 oz cream cheese softened
  • 1 cup salami finely chopped
  • 0.33 cup black olives chopped
  • 0.33 cup green olives chopped
  • 0.33 cup roasted red peppers chopped
  • 2 tbsp parsley finely chopped
  • 2 cloves garlic minced
  • 0.5 tsp Italian seasoning
  • 0.25 tsp black pepper
  • 0.25 tsp salt
Coating
  • 0.5 cup salami chopped
  • 0.25 cup parsley chopped
  • 0.25 cup olives chopped
  • 1 tbsp roasted red peppers optional

Method
 

  1. Beat softened cream cheese in a mixing bowl until smooth.
  2. Add chopped salami, olives, roasted red peppers, parsley, garlic, seasoning, salt, and pepper. Mix well.
  3. Scoop mixture onto plastic wrap and shape into a log.
  4. Spread coating ingredients on a flat surface and roll the log over them until fully covered.
  5. Wrap tightly and refrigerate 1–2 hours.
  6. Serve chilled with crackers or crostini.

Notes

Make ahead the night before for best flavor. Store refrigerated for up to 3 days.
