- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast and season with salt, pepper, garlic powder, and dried thyme.
- Stuff each chicken breast with apple slices and Brie cheese. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium heat and sear chicken 2–3 minutes per side.
- Transfer skillet to oven and bake 20–25 minutes until chicken reaches 165°F (74°C).
- Remove toothpicks, garnish with fresh thyme, and serve warm.
Notes
Use thinly sliced apples for easy stuffing. Let chicken rest 5 minutes after baking for juicier results.
