- Season pork with salt and pepper.
- Sear pork in olive oil until golden on all sides.
- Add butter, garlic, apple cider, and thyme. Simmer until pork is tender.
- Boil sweet potatoes until tender and mash with butter and milk.
- Slice pork and serve with cider sauce and mashed sweet potatoes.
