Ingredients
  

Apple Cider Pork
  • 1.5 lb pork loin
  • 1.5 cups apple cider
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 tsp fresh thyme
Mashed Sweet Potatoes
  • 2 lb sweet potatoes peeled and cubed
  • 3 tbsp unsalted butter
  • 0.5 cup milk or cream

Equipment

  • Large skillet
  • Saucepan
  • Potato masher

Method
 

  1. Season pork with salt and pepper.
  2. Sear pork in olive oil until golden on all sides.
  3. Add butter, garlic, apple cider, and thyme. Simmer until pork is tender.
  4. Boil sweet potatoes until tender and mash with butter and milk.
  5. Slice pork and serve with cider sauce and mashed sweet potatoes.

Notes

Use fresh apple cider for best flavor.
