Ingredients
  

Dry Ingredients
  • 1.5 cups rolled oats or oat flour
  • 1 cup whole wheat flour
  • 1 scoop vanilla protein powder about 30g
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp salt
Wet Ingredients
  • 1 large apple peeled, cored, diced
  • 2 large eggs
  • ½ cup Greek yogurt plain
  • ¼ cup honey or maple syrup
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans optional

Equipment

  • Muffin tin
  • Mixing bowls
  • Wire rack
  • Whisk

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mix dry ingredients in a large bowl.
  3. Whisk wet ingredients in another bowl.
  4. Fold wet into dry ingredients; add diced apple and nuts.
  5. Divide batter into muffin tin, filling ¾ full.
  6. Bake 20–25 minutes; cool 5 minutes then transfer to wire rack.

Notes

Do not overmix to keep muffins tender and fluffy.
