Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Cheesecake Filling
  • 24 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
Apple Layer
  • 3 cups apples peeled and diced
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
Crisp Topping
  • 0.75 cup old-fashioned oats
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter cold, cubed

Equipment

  • Springform pan
  • Mixing bowls
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (165°C). Prepare springform pan.
  2. Mix crust ingredients and bake briefly until set.
  3. Prepare apple mixture and set aside.
  4. Beat cream cheese and sugars until smooth.
  5. Add eggs, vanilla, sour cream, and cream.
  6. Pour filling into crust and top with apples.
  7. Add crumble topping and bake 60–70 minutes.
  8. Cool completely and chill before serving.

Notes

Allow full chilling time for best texture and clean slices.
