Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large
  • 0.75 cup milk
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
  • 1.5 cups diced apples peeled

Equipment

Method
 

  1. Prepare apples and set aside.
  2. Mix dry ingredients in a large bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Combine wet and dry ingredients gently.
  5. Fold in diced apples.
  6. Heat oil to 350°F (175°C).
  7. Fry batter in small portions until golden.
  8. Drain and cool slightly before serving.

Notes

Best served warm; glaze optional.
