Baked Blueberry Donuts

Soft, fluffy, and bursting with blueberries, these baked donuts are a healthier, oven-baked alternative to fried donuts.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon optional
  • cup unsalted butter melted
  • 1 large egg
  • ½ cup milk whole or 2%
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries or frozen, lightly floured
  • 1 cup powdered sugar optional glaze
  • 2 tbsp milk optional glaze
  • ½ tsp vanilla extract optional glaze

Method
 

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. Whisk flour, sugar, baking powder, baking soda, salt, and cinnamon together in a large bowl.
  3. Mix melted butter, egg, milk, and vanilla in another bowl.
  4. Fold wet ingredients into dry until just combined.
  5. Fold in blueberries gently.
  6. Pipe or spoon batter into donut pan, filling ¾ full.
  7. Bake 12–15 minutes until golden and springy.
  8. Cool 5 minutes, transfer to wire rack, glaze if desired.

Notes

For best results, use fresh blueberries. If using frozen, coat lightly with flour to prevent sinking.
