Ingredients
  

Chicken
  • 2 chicken breasts cut into bite-size pieces
  • 1 cup buttermilk
  • 1 egg
  • 1 tsp salt
  • 0.5 tsp black pepper
Coating
  • 1.5 cups breadcrumbs panko preferred
  • 0.5 cup all-purpose flour
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp pepper
Honey BBQ Sauce
  • 0.75 cup BBQ sauce
  • 3 tbsp honey
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 0.5 tsp smoked paprika

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix chicken with buttermilk, egg, salt, and pepper and let sit for 10–15 minutes.
  3. Combine breadcrumbs, flour, paprika, garlic powder, onion powder, salt, and pepper in another bowl.
  4. Coat each chicken piece in breadcrumb mixture and place on baking sheet.
  5. Lightly spray with oil and bake for 18–22 minutes, flipping halfway.
  6. Heat BBQ sauce, honey, ketchup, Worcestershire sauce, and paprika in a saucepan.
  7. Toss baked chicken in warm sauce or brush sauce over top.
  8. Serve hot and enjoy.

Notes

For extra crispiness, broil the chicken for 2 minutes before saucing. Store leftovers refrigerated for up to 3 days.
