Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 1.5 tsp ginger
  • 0.25 tsp cloves
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup molasses unsulphured
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.33 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, ginger, and cloves.
  3. Cream butter and brown sugar until light and fluffy.
  4. Mix in molasses, egg, and vanilla until smooth.
  5. Gradually add dry ingredients until combined.
  6. Roll dough into balls and coat in granulated sugar.
  7. Bake 10–12 minutes until edges are set.
  8. Cool on wire rack before serving.

Notes

Do not overbake for best chewy texture.
