Method
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water and drain.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika.
- Sauté chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, sauté garlic 1–2 minutes until fragrant.
- Reduce heat to medium. Add mayonnaise, sweet chili sauce, sriracha, and heavy cream. Stir until smooth.
- Return chicken to skillet and toss to coat in the sauce.
- Add cooked pasta and Parmesan cheese. Toss until pasta is fully coated.
- If sauce is too thick, add reserved pasta water gradually until desired consistency.
- Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.
- Serve hot, garnished with chopped green onions or parsley.
Notes
Optional: serve with garlic bread or a green salad. Can add extra chili for more spice.
