Ingredients
  

Main Ingredients
  • 12 oz pasta penne, fettuccine, or spaghetti
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • to taste salt and black pepper
  • 3 cloves garlic minced
  • 1/4 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tbsp sriracha adjust for spice
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper flakes optional
  • 2 tbsp chopped green onions or parsley for garnish

Equipment

  • Large skillet
  • Pot for pasta
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika.
  3. Sauté chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
  4. In the same skillet, sauté garlic 1–2 minutes until fragrant.
  5. Reduce heat to medium. Add mayonnaise, sweet chili sauce, sriracha, and heavy cream. Stir until smooth.
  6. Return chicken to skillet and toss to coat in the sauce.
  7. Add cooked pasta and Parmesan cheese. Toss until pasta is fully coated.
  8. If sauce is too thick, add reserved pasta water gradually until desired consistency.
  9. Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.
  10. Serve hot, garnished with chopped green onions or parsley.

Notes

Optional: serve with garlic bread or a green salad. Can add extra chili for more spice.
