Ingredients
  

Chicken
  • 6 boneless chicken thighs skinless
  • 1 cup buttermilk for marinating
  • 1.5 cups cornstarch for coating
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • vegetable oil for frying or air frying
Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 clove garlic minced
Garnish
  • chopped green onions
  • toasted sesame seeds optional

Equipment

  • Mixing bowls
  • Frying pan or air fryer
  • Tongs
  • Whisk

Method
 

  1. Marinate chicken thighs in buttermilk for at least 30 minutes.
  2. Mix cornstarch with garlic powder, paprika, salt, and pepper.
  3. Dredge chicken in cornstarch mixture until fully coated.
  4. Fry chicken thighs in hot oil 4-5 minutes per side, or air fry at 400°F (200°C) for 18-20 minutes.
  5. Whisk together mayonnaise, sweet chili sauce, sriracha, vinegar, honey, and garlic to make sauce.
  6. Coat chicken thighs with bang bang sauce and garnish with green onions and sesame seeds.

Notes

For spicier chicken, increase sriracha in the sauce. Serve immediately to enjoy the crispiness.
