Ingredients
  

Pulled Chicken
  • 2 lbs boneless chicken breasts or thighs
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1.5 cups BBQ sauce
  • 0.5 cup chicken broth
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp black pepper
  • 1 tsp salt
Assembly
  • 6-8 sandwich buns toasted
  • optional toppings coleslaw, pickles, jalapeƱos

Equipment

  • Slow cooker or heavy pot
  • Mixing bowls
  • Cutting board
  • Two forks

Method
 

  1. Place chicken, onion, and garlic in slow cooker or pot.
  2. Mix BBQ sauce, broth, vinegar, sugar, and spices in a bowl.
  3. Pour sauce over chicken, cover, and cook on LOW 6-7 hours or HIGH 3-4 hours.
  4. Remove chicken and shred with two forks.
  5. Return shredded chicken to sauce and stir well.
  6. Toast buns if desired, then assemble sandwiches with toppings.
  7. Serve hot with sides like fries or coleslaw.

Notes

For spicier sandwiches, add cayenne or hot sauce to the sauce mix. Store leftovers in airtight container for up to 4 days or freeze up to 2 months.
