Ingredients
  

Cake
  • 2.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsweetened cocoa powder
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 4 eggs large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 0.5 cup hot brewed coffee
  • 1 cup fresh blackberries
Dark Chocolate Ganache
  • 8 oz dark chocolate finely chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
Optional Decoration
  • to taste blackberries
  • to taste edible gold dust or sugar pearls

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. Sift together flour, cocoa, baking powder, baking soda, and salt.
  3. Whisk sugar, oil, eggs, and vanilla until smooth.
  4. Alternate adding dry ingredients and buttermilk, then stir in hot coffee.
  5. Fold in blackberries carefully.
  6. Divide batter into pans and bake 30–35 minutes. Cool completely.
  7. For ganache, heat cream, pour over chocolate and butter, stir until smooth.
  8. Layer cakes, pour ganache over top, smooth edges.
  9. Decorate with blackberries, edible gold dust, or sugar pearls. Chill slightly before slicing.

Notes

Use fresh or thawed blackberries. For sharper ganache drips, pour when slightly cooled.
