Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 eggs large
  • 2 tsp vanilla extract
Topping
  • 2 cups fresh blueberries
  • 0.25 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tbsp cornstarch optional
Crumble
  • 0.5 cup all-purpose flour
  • 0.25 cup brown sugar
  • 3 tbsp unsalted butter chilled and diced

Method
 

  1. Prepare crust, bake, and cool.
  2. Mix filling ingredients and pour over crust.
  3. Bake cheesecake until set, then cool.
  4. Prepare blueberry topping and crumble.
  5. Top cheesecake with blueberry mixture and crumble.
  6. Chill for at least 4 hours before serving.

Notes
