  • 0.5 cup fresh lemon juice about 2 lemons
  • 3 cloves garlic minced
  • 1 tsp Dijon mustard
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper
  • 0.5 cup extra virgin olive oil
  • 1 tsp honey or maple syrup optional, to balance acidity

Method
 

  1. Mince garlic and juice the lemons.
  2. In a small bowl or jar, whisk together lemon juice, garlic, Dijon mustard, salt, and black pepper.
  3. Slowly drizzle in olive oil while whisking until emulsified.
  4. Add honey or maple syrup if desired and whisk again.
  5. Use immediately or store in the refrigerator up to 1 week.

Notes

Shake or whisk before each use if stored, as oil may separate.
