- Mince garlic and juice the lemons.
 - In a small bowl or jar, whisk together lemon juice, garlic, Dijon mustard, salt, and black pepper.
 - Slowly drizzle in olive oil while whisking until emulsified.
 - Add honey or maple syrup if desired and whisk again.
 - Use immediately or store in the refrigerator up to 1 week.
 
Notes
Shake or whisk before each use if stored, as oil may separate.
