Ingredients
  

Buffalo Chicken Filling
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce adjust to taste
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 2 green onions finely chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
Egg Rolls
  • 8–10 egg roll wrappers
  • 1 egg beaten, for sealing
  • 1/2 cup oil for frying or spray for air fryer

Method
 

  1. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar, green onions, garlic powder, and salt until smooth and well mixed.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon 2–3 tablespoons of filling near the corner.
  3. Fold the corner over the filling, then fold in the sides and roll tightly. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling.
  4. Heat oil in a skillet or deep fryer to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden brown. Drain on paper towels.
  5. Alternatively, air fry at 400°F (200°C) for 10–12 minutes, flipping halfway through, until crispy.
  6. Serve warm with ranch, blue cheese, or extra buffalo sauce for dipping.

Notes

Do not overfill the wrappers to prevent bursting. Fry in small batches for even cooking. Air fryer is a healthier option and still gives crispiness.
