  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1.5 cups long-grain rice
  • 3 cups chicken broth

Method
 

  1. Season chicken with Cajun spices.
  2. Sear chicken in oil until golden, then remove.
  3. Sauté vegetables and garlic.
  4. Add rice, broth, and seasonings.
  5. Return chicken, cover, and simmer until rice is tender.
