Ingredients
  

  • 12 oz pasta fettuccine or penne
  • 12 oz smoked sausage sliced
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese grated
  • 1.5 tsp Cajun seasoning adjust to taste
  • 0.5 tsp paprika
  • 0.25 tsp black pepper

  • Wooden spoon
  • Cheese grater

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Brown sliced smoked sausage in a skillet and set aside.
  3. Melt butter and sauté garlic until fragrant.
  4. Add cream, Cajun seasoning, paprika, and pepper. Simmer gently.
  5. Whisk in Parmesan until smooth.
  6. Return sausage and pasta to skillet, tossing to coat.
  7. Adjust sauce with pasta water as needed and serve hot.

Notes

Adjust Cajun seasoning to control spice level.
