Method
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
 - Whisk together flour, baking powder, baking soda, salt, Parmesan, and Italian herbs.
 - In another bowl, whisk eggs, milk, and olive oil.
 - Fold dry ingredients into wet ingredients until just combined.
 - Gently fold in cherry tomatoes, mozzarella, and basil.
 - Pour batter into loaf pan and smooth the top. Bake 40–45 minutes until toothpick comes out clean.
 - Cool for 10 minutes in pan, then transfer to wire rack. Slice and serve.
 
Notes
Serve warm or at room temperature. Optional drizzle of balsamic glaze adds extra flavor.
