Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs or oregano
  • 3 eggs large
  • 0.5 cup milk
  • 0.25 cup olive oil
Filling
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella cubed
  • 0.25 cup fresh basil chopped

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, Parmesan, and Italian herbs.
  3. In another bowl, whisk eggs, milk, and olive oil.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Gently fold in cherry tomatoes, mozzarella, and basil.
  6. Pour batter into loaf pan and smooth the top. Bake 40–45 minutes until toothpick comes out clean.
  7. Cool for 10 minutes in pan, then transfer to wire rack. Slice and serve.

Notes

Serve warm or at room temperature. Optional drizzle of balsamic glaze adds extra flavor.
