Method
- Cook pasta according to package instructions; reserve ½ cup pasta water.
- Caramelize leeks in butter and olive oil over medium heat until soft and golden.
- Add mushrooms and cook until golden brown; combine with leeks.
- Stir in garlic and thyme; cook until fragrant.
- Pour in cream and simmer 2–3 minutes to thicken.
- Add Gruyere and Parmesan gradually, stirring until smooth.
- Toss cooked pasta with sauce; add reserved pasta water if needed.
- Serve warm, garnished with thyme and extra Gruyere.
Notes
Optional mix-ins: peas, roasted red peppers, or caramelized shallots. Best served immediately.
