Ingredients
  

  • 12 oz pasta penne, fusilli, or farfalle
  • 3 cups broccoli florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2.5 cups whole milk warm
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 0.5 tsp garlic powder
  • 0.25 tsp nutmeg optional
  • salt and pepper to taste

Method
 

  1. Cook pasta in salted water according to package. Add broccoli for last 3 minutes. Drain.
  2. Melt butter in skillet, whisk in flour, cook 1 minute.
  3. Gradually whisk in warm milk until thickened.
  4. Stir in cheddar, Parmesan, garlic powder, nutmeg, salt, and pepper until smooth.
  5. Add pasta and broccoli to sauce. Toss to coat. Serve warm.

Notes

Best served immediately. For meal prep, store in airtight container and reheat with a splash of milk.
