- Heat olive oil in a skillet over medium heat. Sauté onions and garlic 2–3 minutes until softened.
- Add ground beef and cook until browned, breaking into small pieces.
- Add sliced mushrooms, smoked paprika, salt, and black pepper. Cook 5–7 minutes until mushrooms are tender.
- Cut pita pockets in half and warm slightly in a skillet or oven.
- Fill each pita with beef and mushroom mixture, top with shredded cheese.
- Broil for 1–2 minutes until cheese melts and bubbles.
- Drizzle with tzatziki and sprinkle with parsley. Serve immediately.
Notes
Optional add-ins: roasted red peppers, spinach, or olives. Filling can be prepared ahead.
