Ingredients
  

Casserole
  • 2 cups cooked chicken shredded or cubed
  • 3 cups cooked rice white or brown
  • 2 cups broccoli florets steamed or fresh
  • 1 can (10.5 oz) cream of chicken soup
  • 0.5 cup sour cream or Greek yogurt
  • 1 cup cheddar cheese shredded, plus extra for topping
  • 0.5 cup milk
  • 1 tbsp olive oil or butter
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste
Optional Garnish
  • fresh parsley for garnish
  • extra cheese for topping

Equipment

  • Large skillet
  • Wooden spoon
  • Baking dish (optional)

Method
 

  1. Prepare chicken and rice in advance.
  2. Steam or blanch broccoli until just tender.
  3. In skillet, stir together soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  4. Add chicken, rice, and broccoli. Stir to coat.
  5. Mix in cheddar cheese until melted and creamy.
  6. Optional: transfer to baking dish, top with extra cheese, and broil until golden.
  7. Garnish with parsley and serve hot.

Notes

For extra creaminess, stir in a splash of heavy cream. Can be assembled ahead and baked when ready to serve.
