- Heat olive oil in a large skillet over medium-high heat.
- Add chicken, garlic, Cajun seasoning, salt, and pepper. Cook until chicken is browned and cooked through.
- Remove chicken and set aside. Add rotini pasta and chicken broth to skillet.
- Cover and simmer until pasta is tender and liquid is mostly absorbed.
- Stir in cream, cooked chicken, and cheeses until melted and creamy.
- Serve hot, garnished with parsley or green onions.

Adjust spice level to taste. Add vegetables or swap proteins as desired.
