Chicken & Pasta
  • 1 lb chicken breast cubed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tsp Cajun seasoning
  • 2 cups rotini pasta uncooked
Creamy Sauce
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken, garlic, Cajun seasoning, salt, and pepper. Cook until chicken is browned and cooked through.
  3. Remove chicken and set aside. Add rotini pasta and chicken broth to skillet.
  4. Cover and simmer until pasta is tender and liquid is mostly absorbed.
  5. Stir in cream, cooked chicken, and cheeses until melted and creamy.
  6. Serve hot, garnished with parsley or green onions.
