  • 2 lb Yukon Gold potatoes
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 1 cup Gruyère cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 tsp fresh thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven and prepare baking dish.
  2. Slice potatoes hasselback-style and arrange upright.
  3. Prepare garlic cream mixture.
  4. Pour cream over potatoes and add cheese.
  5. Bake covered, then uncovered until golden.
  6. Rest briefly before serving.

Notes

For extra crisp edges, broil for 2–3 minutes at the end while watching closely.
