Chicken Poppers
  • 1 lb chicken breast cubed
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 2 tbsp olive oil
  • 4 oz cream cheese softened
  • 0.5 cup cheddar cheese shredded
  • 2-3 jalapeños finely diced
  • 1 tsp ranch seasoning
Creamy Dip
  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 1 tsp ranch seasoning
  • 1 tsp lemon juice
  • pinch salt and pepper

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss chicken cubes with salt, pepper, garlic powder, smoked paprika, and onion powder.
  3. Mix cream cheese, cheddar, diced jalapeños, and ranch seasoning.
  4. Stuff each chicken cube with cheese mixture.
  5. Place on baking sheet and drizzle with olive oil; bake 15–20 minutes, turning halfway.
  6. Mix sour cream, mayonnaise, ranch, lemon juice, salt, and pepper for dip.
  7. Serve chicken poppers warm with creamy dip.

Notes

Air fryer option: cook at 375°F for 12–15 minutes. Adjust spice level by adding more jalapeños or cayenne.
