Ingredients
  

Mashed Potato Bites
  • 2 cups prepared mashed potatoes cooled
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 1 egg beaten
  • 0.25 cup all-purpose flour
  • 2 tbsp chopped green onions or chives
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp butter melted, for brushing

  • Spoon or small scoop

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix mashed potatoes, cheddar, Parmesan, egg, flour, garlic powder, salt, pepper, and optional add-ins.
  3. Form 1–2 inch balls and place them on the prepared baking sheet.
  4. Brush each ball with melted butter.
  5. Bake for 15–20 minutes until golden brown and crispy.
  6. Sprinkle with chopped chives or parsley and serve warm with optional dipping sauces.

Notes

Use slightly cooled mashed potatoes for better shaping. Can be frozen before baking for later use.
