Ingredients
  

  • 2 cups mashed potatoes
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 eggs large
  • 0.5 cup breadcrumbs
  • 2 tbsp butter melted
  • 2 tbsp chives chopped

Method
 

  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  2. Mix mashed potatoes, eggs, butter, salt, pepper, and garlic powder.
  3. Stir in cheeses, breadcrumbs, and chives.
  4. Fill muffin cups with potato mixture.
  5. Bake 25–30 minutes until puffed and golden.
  6. Cool slightly, remove, and serve warm.

Notes

Use leftover mashed potatoes for best results.
