  • 4 cups cubed Yukon Gold potatoes
  • 1 tbsp olive oil or butter
  • 3 tbsp unsalted butter melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 oz ranch seasoning mix 1 packet
  • 1 cup sour cream or Greek yogurt
  • 0.5 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 0.25 cup grated Parmesan
  • 2 tbsp fresh parsley or chives chopped
  • salt and pepper to taste
  • optional crispy bacon bits for topping

Method
 

  1. Preheat oven to 400°F (200°C) and grease a casserole dish.
  2. Toss cubed potatoes with olive oil, salt, and pepper; roast 20–25 minutes.
  3. Combine melted butter, ranch seasoning, garlic powder, onion powder, sour cream, and heavy cream in a bowl.
  4. Add roasted potatoes and toss to coat.
  5. Transfer mixture to casserole dish and sprinkle with cheddar and Parmesan.
  6. Bake for 15–20 minutes until cheese is melted and bubbly.
  7. Garnish with parsley or chives and optional bacon bits.
  8. Serve warm immediately.

Notes

Prepare ahead and refrigerate, then bake before serving. Great for family dinners or holidays.
