- Preheat oven to 400°F (200°C) and grease a casserole dish.
- Toss cubed potatoes with olive oil, salt, and pepper; roast 20–25 minutes.
- Combine melted butter, ranch seasoning, garlic powder, onion powder, sour cream, and heavy cream in a bowl.
- Add roasted potatoes and toss to coat.
- Transfer mixture to casserole dish and sprinkle with cheddar and Parmesan.
- Bake for 15–20 minutes until cheese is melted and bubbly.
- Garnish with parsley or chives and optional bacon bits.
- Serve warm immediately.
