- Preheat oven to 425°F (220°C). Remove leaves and trim cauliflower stem. Slice into 3/4-inch thick steaks.
- Brush both sides with olive oil. Sprinkle garlic powder, smoked paprika, salt, and pepper.
- Arrange on parchment-lined baking sheet in single layer.
- Roast 20–25 minutes, flipping halfway, until golden brown and tender.
- Sprinkle cheddar and Parmesan on steaks. Return to oven 3–5 minutes until cheese melts.
- Garnish with parsley and optional red pepper flakes. Serve warm.
Notes
Slice cauliflower evenly for uniform cooking. Roast at high temperature for caramelization. Store leftovers in fridge 3–4 days.
