  • 1 large head cauliflower
  • 2 tbsp olive oil
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Remove leaves and trim cauliflower stem. Slice into 3/4-inch thick steaks.
  2. Brush both sides with olive oil. Sprinkle garlic powder, smoked paprika, salt, and pepper.
  3. Arrange on parchment-lined baking sheet in single layer.
  4. Roast 20–25 minutes, flipping halfway, until golden brown and tender.
  5. Sprinkle cheddar and Parmesan on steaks. Return to oven 3–5 minutes until cheese melts.
  6. Garnish with parsley and optional red pepper flakes. Serve warm.

Notes

Slice cauliflower evenly for uniform cooking. Roast at high temperature for caramelization. Store leftovers in fridge 3–4 days.
