- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Whisk together flour, baking soda, salt, and cinnamon.
- Cream butter and brown sugar until light and fluffy.
- Add maple syrup, egg, and vanilla; mix well.
- Gradually mix dry ingredients into the wet ingredients.
- Roll dough into balls and coat with cinnamon sugar.
- Bake 9–11 minutes until soft and slightly underbaked.
- Cool for 5 minutes on the sheet before transferring to a rack.
Notes
Do not overbake; cookies should look soft when removed. Add white chocolate chips for a festive variation.
