  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup pure maple syrup
  • 1 egg large
  • 1 tbsp vanilla extract
Coating
  • 0.25 cup granulated sugar for rolling
  • 1 tsp ground cinnamon for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Whisk together flour, baking soda, salt, and cinnamon.
  3. Cream butter and brown sugar until light and fluffy.
  4. Add maple syrup, egg, and vanilla; mix well.
  5. Gradually mix dry ingredients into the wet ingredients.
  6. Roll dough into balls and coat with cinnamon sugar.
  7. Bake 9–11 minutes until soft and slightly underbaked.
  8. Cool for 5 minutes on the sheet before transferring to a rack.

Notes

Do not overbake; cookies should look soft when removed. Add white chocolate chips for a festive variation.
