Chicken Cordon Bleu
  • 4 chicken breasts boneless, skinless
  • 4 slices Swiss cheese
  • 4 slices ham
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cups bread crumbs panko or regular
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 2 tbsp olive oil or butter for baking
Swiss Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk whole or 2%
  • 1 cup Swiss cheese shredded
  • 0.5 tsp Dijon mustard optional
  • salt and pepper to taste

Equipment

  • Meat mallet
  • Mixing bowls
  • Baking dish
  • Saucepan

Method

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Pound chicken breasts to ½-inch thickness between plastic wrap.
  3. Place ham and cheese on each breast, roll tightly, and secure with toothpicks.
  4. Set up breading stations with flour, beaten eggs, and seasoned bread crumbs.
  5. Dredge chicken in flour, dip in eggs, then coat in bread crumbs.
  6. Bake for 25–30 minutes until golden brown and cooked through.
  7. Meanwhile, prepare sauce: melt butter in saucepan, whisk in flour to form roux.
  8. Gradually whisk in milk, cook until thickened, then stir in Swiss cheese and Dijon.
  9. Season sauce with salt and pepper.
  10. Serve chicken cordon bleu drizzled with cheese sauce and garnish with parsley.

Notes

Secure chicken with toothpicks and remove before serving. Rest chicken for 5 minutes before slicing to keep cheese inside.
