  • 9 lasagna noodles regular or no-boil
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 3 tbsp all-purpose flour
  • 3 cups milk whole milk preferred
  • 1 cup heavy cream
  • 2 cups shredded chicken cooked
  • 3 cups fresh spinach or 1½ cups frozen, drained
  • 1.5 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Cook lasagna noodles in salted water until al dente. Drain and lay flat on parchment.
  3. In a saucepan, melt butter and olive oil. Add onion and garlic; sauté until fragrant.
  4. Whisk in flour, then gradually add milk and cream, stirring until thickened. Season with salt, pepper, and nutmeg.
  5. Add shredded chicken and spinach to the sauce, simmer briefly.
  6. Layer sauce, noodles, and cheeses in baking dish, repeating until finished. Top with mozzarella and parmesan.
  7. Cover with foil and bake 25 minutes, then uncover and bake 15 minutes more until golden.
  8. Let rest 10 minutes before serving. Garnish with parsley.
