- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
 - Cook lasagna noodles in salted water until al dente. Drain and lay flat on parchment.
 - In a saucepan, melt butter and olive oil. Add onion and garlic; sauté until fragrant.
 - Whisk in flour, then gradually add milk and cream, stirring until thickened. Season with salt, pepper, and nutmeg.
 - Add shredded chicken and spinach to the sauce, simmer briefly.
 - Layer sauce, noodles, and cheeses in baking dish, repeating until finished. Top with mozzarella and parmesan.
 - Cover with foil and bake 25 minutes, then uncover and bake 15 minutes more until golden.
 - Let rest 10 minutes before serving. Garnish with parsley.
