Ingredients
  

Salad Base
  • 1 can chickpeas 15 oz, drained and rinsed
  • 1 avocado large, diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.5 cup feta cheese crumbled
  • 2 tbsp parsley chopped
  • 1 tbsp lemon juice fresh
  • 3 tbsp olive oil extra virgin
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground
  • 1 tsp dried oregano optional

Method
 

  1. Drain and rinse chickpeas. Dice avocado, halve cherry tomatoes, and finely chop cucumber and red onion.
  2. In a large bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, and red onion.
  3. Fold in crumbled feta and chopped parsley gently.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, pepper, and optional oregano.
  5. Pour dressing over salad and toss gently to coat all ingredients.
  6. Adjust seasoning to taste. Chill for 15–20 minutes or serve immediately.

Notes

Optional: add roasted chickpeas or kalamata olives for extra flavor.
