Ingredients
  

Sorbet
  • 3 ripe mangoes peeled and diced
  • 0.5 cup sugar adjust to taste
  • 0.5 cup water
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 0.25 tsp chili powder adjust to taste
  • pinch salt optional

Equipment

  • Blender
  • Saucepan
  • Ice cream maker or freezer-safe container
  • Mixing bowl

Method
 

  1. Peel and dice mangoes. Freeze if desired.
  2. Make simple syrup by heating sugar and water until dissolved. Cool.
  3. Blend mango, lime juice, lime zest, chili powder, and syrup until smooth.
  4. Taste and adjust sweetness or chili.
  5. Chill mixture for 1 hour.
  6. Freeze in ice cream maker or shallow container for ~4 hours.
  7. Serve garnished with lime zest, chili, or mint.

Notes

Sorbet can be stored in airtight container in freezer for up to 2 weeks. Let sit 5–10 minutes before scooping.
