Method
- Preheat oven to 350°F (175°C) and line baking sheet with parchment.
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla extract; mix well.
- Combine flour, black cocoa powder, and salt.
- Mix dry ingredients into wet to form soft dough.
- Roll into 1-inch balls and place on baking sheet.
- Press thumb or spoon into center to create well.
- Bake 12–15 minutes until set. Cool 5 minutes.
- Fill centers with jam and cool completely.
Notes
Use thick jams for best results. Store in airtight container for up to a week or freeze unfilled cookies for later use.
