Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 0.75 cup black cocoa powder
  • 0.25 tsp salt
Jam Filling
  • 0.5 cup jam raspberry or preferred flavor

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Cream butter and sugar until light and fluffy.
  3. Add egg and vanilla extract; mix well.
  4. Combine flour, black cocoa powder, and salt.
  5. Mix dry ingredients into wet to form soft dough.
  6. Roll into 1-inch balls and place on baking sheet.
  7. Press thumb or spoon into center to create well.
  8. Bake 12–15 minutes until set. Cool 5 minutes.
  9. Fill centers with jam and cool completely.

Notes

Use thick jams for best results. Store in airtight container for up to a week or freeze unfilled cookies for later use.
