Ingredients
  

Cookie Batter
  • 2 cups rolled oats
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 2 tbsp molasses
  • 1 tsp vanilla extract
Cream Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Whisk dry ingredients and oats together in a bowl.
  3. Cream butter and sugars until fluffy, then beat in eggs, molasses, and vanilla.
  4. Mix in dry ingredients until combined.
  5. Scoop dough onto baking sheets and bake 10–12 minutes.
  6. Cool cookies completely on wire racks.
  7. Beat filling ingredients until light and fluffy.
  8. Sandwich cookies with cream filling.

Notes

Do not overbake for best texture.
