- Preheat oven to 350°F (175°C) and line baking sheets.
- Whisk dry ingredients and oats together in a bowl.
- Cream butter and sugars until fluffy, then beat in eggs, molasses, and vanilla.
- Mix in dry ingredients until combined.
- Scoop dough onto baking sheets and bake 10–12 minutes.
- Cool cookies completely on wire racks.
- Beat filling ingredients until light and fluffy.
- Sandwich cookies with cream filling.
