Cake Batter
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Toffee Crunch
  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar
  • 2 tbsp heavy cream
  • 0.5 tsp vanilla extract

Method
 

  1. Prepare cake batter and bake layers until golden.
  2. Cool cake layers completely before assembling.
  3. Cook toffee ingredients until thick and amber.
  4. Pour toffee onto parchment and allow to harden.
  5. Break toffee into crunchy pieces.
  6. Frost cake layers and sprinkle toffee crunch between layers.
  7. Decorate top with extra toffee crunch before serving.

Notes

Add toffee just before serving to keep maximum crunch. Pairs beautifully with coffee or hot chocolate.
