Ingredients
  

Steak & Marinade
  • 1.5 lbs flank steak or sirloin
  • 3 tbsp olive oil
  • 2 limes juice and zest
  • 3 cloves garlic minced
  • 0.5 cup fresh cilantro chopped
  • 1 tsp honey optional
  • 1 tsp chili flakes
  • salt and black pepper to taste
Cilantro-Lime Rice
  • 2 cups jasmine rice
  • 3 cups water or broth
  • 1 tbsp butter
  • 1 lime juice and zest
  • 0.5 cup cilantro chopped
  • salt to taste
Toppings
  • 1 cup charred corn
  • 1 avocado diced
  • 0.5 red onion finely chopped
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup cotija or feta cheese optional
Creamy Lime Dressing
  • 0.5 cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1 tbsp cilantro chopped
  • salt and pepper to taste

  • Cast iron skillet or grill pan

Method
 

  1. Whisk together marinade ingredients and coat steak. Marinate for 1 hour or overnight.
  2. Cook rice with butter and water until tender. Fluff and stir in lime juice, zest, cilantro, and salt.
  3. Heat skillet or grill pan to high. Sear steak 3–4 minutes per side, rest 10 minutes, then slice.
  4. Whisk dressing ingredients until smooth and creamy.
  5. Assemble bowls with rice base, steak, toppings, and drizzle dressing on top.
  6. Serve immediately with lime wedges and fresh cilantro.

Notes

For a spicier kick, add chipotle to the marinade. Store leftovers separately for up to 3 days.
