Ingredients
  

Pecan Coating
  • 4 cups pecan halves raw, unsalted
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 tsp ground cinnamon
  • 1 tsp fine sea salt
  • 2 tsp vanilla extract
  • 3 egg whites large
  • 2 tbsp water

Method
 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together egg whites, water, and vanilla until frothy.
  3. Add pecans to the egg mixture and toss until fully coated.
  4. In a separate bowl, combine granulated sugar, brown sugar, cinnamon, and salt.
  5. Pour sugar mixture over pecans and toss to coat evenly.
  6. Spread pecans in a single layer on the prepared baking sheet.
  7. Bake for 30-35 minutes, stirring every 10 minutes to prevent clumping and burning.
  8. Cool completely on the baking sheet. Store in an airtight container.

Notes

These candied pecans make perfect gifts or holiday snacks. Optional: add ½ tsp nutmeg for extra warmth.
