Ingredients
  

Tart Crust
  • 1.25 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cubed
  • 0.25 cup powdered sugar
  • 1 egg yolk
  • 1-2 tbsp cold water
Ganache
  • 1 cup dark chocolate chopped
  • 0.5 cup heavy cream
  • 1 tsp vanilla extract
Topping
  • 1.5 cups fresh blueberries
  • 1 tbsp apricot jam optional, for glaze

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine flour and powdered sugar. Cut in butter until coarse crumbs form.
  3. Add egg yolk and cold water, mixing to form dough.
  4. Press dough into tart pan, prick base with fork, and bake 15–20 minutes.
  5. Heat cream and pour over chopped chocolate. Let sit 1–2 minutes, stir smooth, add vanilla.
  6. Pour ganache into cooled tart shell and smooth top.
  7. Chill 1–2 hours until set.
  8. Arrange fresh blueberries on top.
  9. Optional: brush berries with warm apricot jam for glaze.
  10. Serve chilled or at room temperature.

Notes

Can be prepared a day in advance. Keep refrigerated until serving. Use fresh, ripe blueberries for best flavor.
