Method
- Preheat oven to 350°F (175°C).
- Combine flour and powdered sugar. Cut in butter until coarse crumbs form.
- Add egg yolk and cold water, mixing to form dough.
- Press dough into tart pan, prick base with fork, and bake 15–20 minutes.
- Heat cream and pour over chopped chocolate. Let sit 1–2 minutes, stir smooth, add vanilla.
- Pour ganache into cooled tart shell and smooth top.
- Chill 1–2 hours until set.
- Arrange fresh blueberries on top.
- Optional: brush berries with warm apricot jam for glaze.
- Serve chilled or at room temperature.
Notes
Can be prepared a day in advance. Keep refrigerated until serving. Use fresh, ripe blueberries for best flavor.
