Ingredients
  

Treats
  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups sweetened shredded coconut
Topping
  • 0.5 cup toasted coconut flakes
  • 2 tbsp white chocolate drizzle optional

Method
 

  1. Toast coconut flakes in a pan until golden and fragrant.
  2. Melt butter over low heat in a large pot.
  3. Add mini marshmallows and stir until smooth.
  4. Stir in vanilla extract and 1 cup toasted coconut.
  5. Add Rice Krispies cereal and fold gently until coated.
  6. Press into lined baking pan and top with extra toasted coconut.
  7. Cool, slice, and serve or drizzle with white chocolate.

Notes

For extra crunch, mix in chopped almonds or pecans before pressing into pan.
