Method
- Toast coconut flakes in a pan until golden and fragrant.
- Melt butter over low heat in a large pot.
- Add mini marshmallows and stir until smooth.
- Stir in vanilla extract and 1 cup toasted coconut.
- Add Rice Krispies cereal and fold gently until coated.
- Press into lined baking pan and top with extra toasted coconut.
- Cool, slice, and serve or drizzle with white chocolate.
Notes
For extra crunch, mix in chopped almonds or pecans before pressing into pan.
