Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp instant coffee granules
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 egg yolk large
  • 1 tsp vanilla extract
  • 1 tbsp brewed strong coffee optional

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and instant coffee granules in a medium bowl.
  3. Beat butter and brown sugar until light and fluffy. Add egg and vanilla, mixing well.
  4. Gradually mix dry ingredients into butter mixture until a soft dough forms.
  5. Beat cream cheese with sugar, egg yolk, vanilla, and optional coffee until smooth.
  6. Scoop cookie dough, flatten slightly, add cheesecake filling, cover with dough and seal edges.
  7. Bake 12–15 minutes until edges are lightly golden. Cool on wire racks.
  8. Optional: drizzle with melted chocolate or coffee glaze before serving.

Notes

Ensure cream cheese and butter are at room temperature for best results.
