- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, salt, and instant coffee granules in a medium bowl.
- Beat butter and brown sugar until light and fluffy. Add egg and vanilla, mixing well.
- Gradually mix dry ingredients into butter mixture until a soft dough forms.
- Beat cream cheese with sugar, egg yolk, vanilla, and optional coffee until smooth.
- Scoop cookie dough, flatten slightly, add cheesecake filling, cover with dough and seal edges.
- Bake 12–15 minutes until edges are lightly golden. Cool on wire racks.
- Optional: drizzle with melted chocolate or coffee glaze before serving.
