  • 2 cups black beans drained and rinsed
  • 1.5 cups corn
  • 1 cup cherry tomatoes diced
  • 0.5 cup red onion chopped
  • 1 bell pepper diced
  • 1 avocado cubed

Method
 

  1. Combine beans, corn, tomatoes, onion, and pepper in a bowl.
  2. Whisk dressing ingredients together.
  3. Toss dressing with vegetables.
  4. Fold in avocado and chill before serving.

Notes

Add avocado just before serving for best texture.
