- In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, and smoked paprika. Refrigerate until ready to use.
- In a large bowl, combine ground beef with garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix gently.
- Divide beef into 4 portions and shape into ¾-inch thick patties, making a small indentation in the center.
- Preheat grill or skillet over medium-high heat. Cook patties 3–4 minutes per side, adding cheddar cheese during the last minute to melt.
- Lightly toast burger buns on the grill or in a skillet.
- Spread special sauce on top and bottom buns. Layer with lettuce, tomato, pickles, optional bacon, and the cheesy beef patty.
- Top with the other bun and serve immediately.
Notes
Make the special sauce a day ahead for deeper flavor. Use high-fat beef for juicier patties.
