Method
- Preheat oven to 375°F (190°C).
- Boil the potatoes in salted water until fork-tender, about 15 minutes.
- Drain potatoes well and return to the warm pot to remove excess moisture.
- Mash potatoes with butter until smooth and creamy.
- Stir in sour cream, heavy cream, salt, pepper, and garlic powder.
- Mix in 1 cup cheddar and all of the mozzarella.
- Spread mixture into a casserole baking dish.
- Top with remaining cheddar, Parmesan, and melted butter.
- Bake for 20–25 minutes until golden and heated through.
- Remove from oven and garnish with chives or parsley before serving.
Notes
For extra flavor, add roasted garlic or caramelized onions. Great for meal prep and reheating.
