Creamiest Baked Mashed Potatoes

Ingredients
  

Mashed Potatoes
  • 3 lbs Russet or Yukon Gold potatoes peeled and cut into chunks
  • 0.5 cup unsalted butter softened
  • 1 cup heavy cream or whole milk
  • 0.75 cup sour cream
  • 1.5 cups shredded cheddar cheese divided
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder optional
Topping
  • 2 tbsp unsalted butter melted
  • 2 tbsp chives or parsley chopped, for garnish

Equipment

  • Large pot
  • Potato masher or mixer
  • Casserole baking dish
  • Oven

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Boil the potatoes in salted water until fork-tender, about 15 minutes.
  3. Drain potatoes well and return to the warm pot to remove excess moisture.
  4. Mash potatoes with butter until smooth and creamy.
  5. Stir in sour cream, heavy cream, salt, pepper, and garlic powder.
  6. Mix in 1 cup cheddar and all of the mozzarella.
  7. Spread mixture into a casserole baking dish.
  8. Top with remaining cheddar, Parmesan, and melted butter.
  9. Bake for 20–25 minutes until golden and heated through.
  10. Remove from oven and garnish with chives or parsley before serving.

Notes

For extra flavor, add roasted garlic or caramelized onions. Great for meal prep and reheating.
