  • 2 lbs potatoes thinly sliced
  • 2 tbsp butter plus more for greasing
  • 2 cloves garlic minced
  • 1 small onion sliced
  • 1.5 cups heavy cream
  • 1 cup milk
  • 1.5 cups Gruyère cheese shredded
  • 1 cup cheddar cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 tbsp fresh thyme or ½ tsp dried
  • 0.5 tsp nutmeg optional
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Butter a baking dish.
  2. Peel and thinly slice potatoes with a mandoline.
  3. In a saucepan, melt butter, add garlic and onion; cook until fragrant.
  4. Stir in cream, milk, nutmeg, salt, and pepper. Heat gently without boiling.
  5. Layer potatoes, cream, and cheeses alternately, finishing with cheese on top.
  6. Cover with foil and bake for 45 minutes. Uncover and bake 20 minutes more until golden and bubbly.
  7. Let rest 10–15 minutes before serving. Garnish with parsley.

Notes

For extra crispness, broil for 3 minutes at the end. Best served warm.
