  • 12 oz pasta (penne or fettuccine)
  • 1 lb chicken breasts thinly sliced
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • 2 tbsp butter
  • 2 tbsp parsley chopped

Method
 

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning. Cook in skillet with olive oil until golden and cooked through. Remove and set aside.
  3. In the same skillet, add butter and garlic. Sauté until fragrant.
  4. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
  5. Whisk in parmesan until melted and sauce thickens. Season with salt, pepper, and red pepper flakes.
  6. Return chicken to skillet. Add pasta and toss to coat evenly.
  7. Garnish with parsley and extra parmesan before serving.

Notes

For best results, use freshly grated parmesan. Reserve pasta water to thin the sauce if needed.
